Sherbet Daydream evolved out of the collaboration bottle we made with Restaurant Kadeau in 2022. Using their signature pickled pine as a point of inspiration, we pickle rhubarb in a liquor that we infuse with foraged Douglas fir. This rhubarb is macerated in a redcurrant wine, and at blending time we add just a tiny amount of the pickle juice to pique the acidity. A juniper water kefir provides the backbone of the blend.

TASTING NOTES
Described by a sommelier as "a cross between a Christmas tree and the Barbie movie," this is an approachable and fun aperitif to kick off any celebration. Bright acidity and woodsy tannins from the fir provide structure to the soft fruit, with a background creaminess from the kefir.
